It’s pumpkin season, and we’re eating pumpkin any way we can. Here’s 3 more pumpkin recipes for you to try this fall!


Pumpkin Cookies

Ingredients

  • 2 ½ cups flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp salt
  • 1 ½ cups granulated sugar
  • ½ cup + 1tbsp butter, softened
  • 1 cup pumpkin puree
  • 1 egg
  • 2 tsp vanilla
  • 2 cups powdered sugar
  • 3 tbsp milk of choice

Instructions 

  1. Preheat your oven to 350°F (177° C) and grease your baking sheet.
  2. Combine flour, baking soda, baking powder, cinnamon, nutmeg and salt into a bowl and set aside.
  3. Beat granulated sugar and ½ cup butter (leave out 1 tbsp) with a mixer until creamy. Beat in pumpkin, egg and 1 tsp vanilla until smooth.
  4. Slowly add dry ingredients until well combined.
  5. Drop rounded tablespoons onto the prepared baking sheet and bake for 15 -18 mins or until edges are firm.
  6. Cool on a baking sheet for 2 minutes and then transfer to a wire rack.
  7. Combine powdered sugar, milk, remaining vanilla and 1 tbsp of butter until smooth and drizzle over cookies.

Pumpkin Bread

Ingredients

  • 2 cups flour
  • ½ tsp salt
  • 1 tsp baking soda
  • ½ tsp baking powder
  • 1 tsp cloves
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • ¾ cup butter, softened
  • 2 cups sugar
  • 2 eggs
  • 15 oz pumpkin puree

Instructions 

  1. Preheat oven to 325° F (165° C) and place the rack in the middle position. Grease two 8”x4” loaf pans and dust with flour.
  2. In a medium bowl, combine flour, salt, baking soda, baking powder, cloves, cinnamon and nutmeg and set aside.
  3. With an electric mixer, beat eggs and sugar until blended. Add in eggs and mix until fluffy. Beat in pumpkin. Add flour mixture on low until combined.
  4. Divide evenly into the two loaf pans and bake for 65-75 mins or until a cake tester comes out clean.
  5. Let cool in the pan for about 10 mins and then transfer to a wire rack. 

Pumpkin Mac & Cheese

Ingredients 

  • 2 cups pumpkin puree
  • 2 tbsp garlic, minced
  • ½ tbsp salt
  • 2 tbsp butter or olive oil
  • 1 cup milk of choice
  • 1 cup shredded cheese or ¾ cup nutritional yeast
  • Noodles

Instructions

  1. Salt and boil water to cook noodles according to the package.
  2. Combine all sauce ingredients into a medium pot and bring to a boil. Lower the heat and stir until all the cheese has melted and your sauce is fully combined.
  3. Drain your noodles, combine with sauce and enjoy!
