Pumpkin Cookies

Ingredients
- 2 ½ cups flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp cinnamon
- ½ tsp ground nutmeg
- ½ tsp salt
- 1 ½ cups granulated sugar
- ½ cup + 1tbsp butter, softened
- 1 cup pumpkin puree
- 1 egg
- 2 tsp vanilla
- 2 cups powdered sugar
- 3 tbsp milk of choice
Instructions
- Preheat your oven to 350°F (177° C) and grease your baking sheet.
- Combine flour, baking soda, baking powder, cinnamon, nutmeg and salt into a bowl and set aside.
- Beat granulated sugar and ½ cup butter (leave out 1 tbsp) with a mixer until creamy. Beat in pumpkin, egg and 1 tsp vanilla until smooth.
- Slowly add dry ingredients until well combined.
- Drop rounded tablespoons onto the prepared baking sheet and bake for 15 -18 mins or until edges are firm.
- Cool on a baking sheet for 2 minutes and then transfer to a wire rack.
- Combine powdered sugar, milk, remaining vanilla and 1 tbsp of butter until smooth and drizzle over cookies.
Pumpkin Bread

Ingredients
- 2 cups flour
- ½ tsp salt
- 1 tsp baking soda
- ½ tsp baking powder
- 1 tsp cloves
- 1 tsp cinnamon
- 1 tsp nutmeg
- ¾ cup butter, softened
- 2 cups sugar
- 2 eggs
- 15 oz pumpkin puree
Instructions
- Preheat oven to 325° F (165° C) and place the rack in the middle position. Grease two 8”x4” loaf pans and dust with flour.
- In a medium bowl, combine flour, salt, baking soda, baking powder, cloves, cinnamon and nutmeg and set aside.
- With an electric mixer, beat eggs and sugar until blended. Add in eggs and mix until fluffy. Beat in pumpkin. Add flour mixture on low until combined.
- Divide evenly into the two loaf pans and bake for 65-75 mins or until a cake tester comes out clean.
- Let cool in the pan for about 10 mins and then transfer to a wire rack.
Pumpkin Mac & Cheese

Ingredients
- 2 cups pumpkin puree
- 2 tbsp garlic, minced
- ½ tbsp salt
- 2 tbsp butter or olive oil
- 1 cup milk of choice
- 1 cup shredded cheese or ¾ cup nutritional yeast
- Noodles
Instructions
- Salt and boil water to cook noodles according to the package.
- Combine all sauce ingredients into a medium pot and bring to a boil. Lower the heat and stir until all the cheese has melted and your sauce is fully combined.
- Drain your noodles, combine with sauce and enjoy!
