Heat oil in a large pot over medium heat. Add your onions, salt and some fresh ground pepper. Saute until onion is softened. Add your squash and cook 8-10 minutes.
Add garlic, sage, rosemary and ginger. Stir and cook until fragrant. Add 3 cups of broth and bring to a boil. Cover and reduce heat to a simmer. Cook until squash is tender.
Let cool slightly, pour into a blender and blend until smooth. Add more broth if your soup is too thick. Season to taste and top with parsley, and crusted bread if desired.
In a dutch oven or crock pot, melt butter and olive oil. Add onions, carrots and garlic. Cook until onions are translucent.
Whisk in flour and let it cook for a minute. Slowly stir in chicken broth and summer until it starts to thicken.
In a pan, cook your gnocchi according to the package, drain and set aside.
Add milk to your veggie and broth mix and bring to a boil adding seasonings. Once at a boil reduce heat and add gnocchi, spinach and chicken. Simmer until heated throughout and thickened.
