(per guest on individual plates)

  • Watermelon in chunks about 2" X 2"
  • 2 kalamata olives pitted and diced finely
  • 1 1/2 tsp of feta cheese crumbled
  • 2 mint leaves torn
  • 1/2 tsp white wine vinegar
  • 1 tsp Extra virgin olive oil
  • Balsamic Glaze (Optional)


  1. Place the watermelon on the plate
  2. Layer with olives and then feta cheese
  3. Add mint leaves
  4. Mix 1/2 tsp of white wine vinegar with 1 tsp of olive oil
  5. Drizzle on top of the salad
  6. Garnish the plate with remaining olive oil dressing and balsamic glaze
